John Stirk has appeared in a TV talent search to find Britain's top butcher. In 2010 when he was 24-years-old he showed he was a cut above the rest when he featured in BBC3's Young Butcher of the Year show. The programme, which was screened in December 2010, saw the former pupil at Southmoor School take on a series of challenges, including making a variety of displays out of chicken. I was up against some of the best butchers in the country.
So what makes a good butcher John said: "Obviously, a lot comes down to the quality of the meat. We use good, locally sourced meat that is always fresh.

We do catering and I’ve bought a pie machine. The home-made pies are going down really well with customers.” The budding entrepreneur said it was a proud moment when he bought the business from Graeme Davidson, 55, his former boss, and saw his name above the door. “Graeme was amazing, ” he said. “I started here as a Saturday boy when I was at school, working on weekends and during school holidays, and it went from there.
“Graeme is still working here and he’ll be a big part of what we do here. “I’m grateful to him for selling me the business and giving me this chance. It’s a big opportunity for me.” Undaunted by the recession, John said he is determined to make a success of Stirk’s Family Butchers and Caterers, where he lives as well as works. One of my favourite meals is steak pie, peas and chips. Bought large steak pie from Stirks in Sea Road Fulwell, must be one of the worst pies I have ever had. Full of gravy, a couple of pieces of fatty steak. I have bought lots of meat, meat packs etc from this shop, but won,t be buying more.

next time your in the shop please let one of the staff know about your pie and we can put it right very sorry you,ve had a problem with our product

My family have been regular customers at Stirk's since John took over the business. (We also shopped there when Graeme was in charge.) He's very enterprising, the meat is always excellent quality and good value and the service first class. This is a business which thoroughly deserves its success.
